Hey there! It’s me again. Back with another recipe that’s quick and easy to make. These chicken quesadillas are the perfect weeknight meal because they takes little effort to make and only has 5 key ingredients. If you are a mom that doesn’t like to cook, this is definitely for you. This chicken quesadillas recipe will have you in and out of the kitchen in no time and back to doing whatever your heart desires.
Can I be real with you for a second? I’ve been thinking lately about how I can really help you create more time and space in your life through cooking and came to an epiphany recently. That epiphany being to only include 5 key ingredients in recipes I cook from now on. So this chicken quesadilla recipe is the first of many and I truly hope it will open up even more space for you to do the things you need and want to do.
Alright let’s get back to the recipe. Want to know my favorite part?! It’s the chicken. The chicken is super flavorful and moist and will be hard not to eat before stuffing it into the quesadillas. You will love it. Also I love the ease of this recipe. Making these chicken quesadillas are literally foolproof unless you burn the tortilla while heating them. Yes, I’ve done this before so pay careful attention when heating your tortillas.
How To Make
First, you want to cook the chicken. To do this, first season your chicken thighs with taco seasoning. Once seasoned, now add a little olive oil to a large skillet over medium heat. Once heated, it’s time to cook the chicken. You want to cook the chicken on both sides for about 5-6 mins, flipping occasionally to prevent the chicken from burning. Once the chicken is cooked fully, which can take between 15-20 minutes, you now will transfer it to a plate or cutting board in order to let it cool for a bit. While the skillet is still over medium heat, add the peppers and sauté for 6-8 mins until they are softened. Turn off the heat and set aside. Now it’s time to cut the chicken into pieces and then add back into the skillet with the peppers.
This is where the fun part begins. Now you can start to build your quesadilla. To a large flour tortilla, to one half/side of it, add the cheese. Then add the chicken and pepper mix, and then more cheese on top of the chicken and peppers. Fold one half of the tortilla over the other and set aside. You want to do this for however many quesadillas you are planning to make.
Once you have all your stuffed tortillas are ready to go, next you can heat a large non-stick skillet or cast iron over medium heat. Once heated, add one stuffed tortilla to the pan and heat for 2-3 minutes. Flip the tortilla to the other side and heat again for another 2- 3 mins. You may have to heat them on both sides again to allow the cheese to melt completely. Just be sure not to burn them! Repeat this with the remaining stuffed tortillas until all quesadillas are heated.

Chicken Quesadillas | Dinner
5 Key Ingredients
- 1 pound chicken thighs, boneless, skinless
- 1/2 package taco seasoning
- 1/2 red bell pepper
- 4-6 large flour tortillas
- 3 tbsp olive oil
Season your chicken thighs with taco seasoning.
Add oil to a large skillet over medium heat. Once heated, cook the chicken on both sides for about 5-6 mins, flipping occasionally to prevent the chicken from burning.
When the chicken is cooked fully, which can take between 15-20 minutes, transfer to a plate or cutting board.
While the skillet is still over medium heat, add the peppers to the skillet and sauté for 6-8 mins until softened.
Once softened, turn off heat and set aside.
Cut the chicken into bite sized pieces and add back to skillet with the peppers.
To a large flour tortilla, add cheese to one side, place some chicken and pepper mixture on top of cheese, and add more cheese on top of the chicken and peppers.
Fold the other half of the tortilla over top the cheese and set aside. You want to do this for however many quesadillas you are planning to make.
Heat a large non-stick skillet or cast iron over medium heat. DO NOT add any oil to pan.
Once heated, add one stuffed tortilla to the pan and heat for 2-3 minutes on one side.
Flip the tortilla to the other side and heat again for another 2- 3 mins.
Repeat with the remaining stuffed tortillas until all quesadillas are heated.
