So today I have a super easy, very simple meal that will not only warm you up, but will help you create more time and space in your life. This crockpot broccoli cheddar soup is delicious, cheesy, and such a great meal to make for the fam. Best of all, it only has 5 ingredients and won’t take much effort at all!
Alright, I know I’m not the only one that enjoys a nice hot bowl of soup. I especially love it because I’m the type that once I get cold, I stay cold. My hands and feet are usually the coldest things on my body and every year when the weather cools down, it never fails. So I love to make warm things during this time of year. No cold sandwiches or salads for me. I need something that’s heated. Let me know if you can relate to this so I don’t feel alone.
So today, I’m sharing my broccoli cheddar soup with you. And not just any soup, a crockpot soup. Why? Because I think the best way to heat a soup is low and slow. Also using your crockpot only allows more time for you to do other things like straighten up the house or fold some clothes. Or you could just relax with the family…watch a movie or something.
How to Make
This recipe is a no brainer and only has a few steps so let’s get to it. First, place your broccoli, broth, milk, and spices into the crockpot. Set your crockpot on high and let this cook for 2 hours. After 2 hours, stir in the butter paste. Add cheese, replace the lid, and turn crockpot to low setting and let cook for an additional 10 minutes. Remove the lid after 10 minutes and stir all ingredients until the cheese is fully melted.

Choosing the Right Cheese
It’s important to choose a melty type of cheese, such as Velveeta. This type of cheese will melt perfectly in the crockpot and is less likely to clump up. Pro tip: Shredding the cheese helps it to melt quicker!
How to Thicken More
This soup is not a really thick hearty soup. To make it a little thicker, add a mixture of 2 tablespoons of flour to 2 of tablespoons of water and stir it to the crockpot when you add the butter paste. Remember, this is optional but great to do if you want a thicker soup!

Crockpot Broccoli Cheddar Soup | Dinner
- 2 heads broccoli, stems removed 3-4 cups broccoli florets
- 2 cups chicken broth or veggie broth
- 2 cups milk of choice
- 2 tbsp butter paste
- 8 oz cheese, cubed or shredded melty cheese, such as Velvetta
- 2 tbsp butter, softened to room temperature
- 2 tbsp all purpose flour
- 1/4 tsp salt
- 1/8 tsp ground black pepper
Place broccoli, broth, milk, and spices into crockpot.
Set crockpot on high and allow to cook for 2 hours.
After 2 hours, gently stir in butter paste.
Add cheese, replace lid, and turn crockpot on low setting and let cook for an additional 10 minutes.
Remove lid after 10 minutes and stir all ingredients together until cheese is fully melted.
