So today I have for you a glazed roasted carrots recipe that is the perfect side dish to pair with your dinner. It’s so simple to make and tastes amazing! Plus I heard carrots are the best this time of year.
Eating carrots has always been a struggle for me. And the only way I’ve enjoyed eating them is by roasting them. So if you need your kids to get in more veggies, this recipe is a perfect way to make that happen. Roasting carrots brings out their sweetness. And pairing that with a sweetly spiced glaze only makes it taste that much better. I literally had to stop myself from eating the entire pan because they are just that good! And I’m pretty sure your family will enjoy these glazed roasted carrots. And you will enjoy how easy and quick they are to make. A win win for everyone!
How To Make It
This is a really simple recipe. First preheat your oven to 375 degree Fahrenheit. While the oven is preheating, start to peel and slice your carrots. Set the carrots aside while you begin to put together the glaze. To make the glaze, add olive oil, honey, balsamic vinegar, salt, pepper, and garlic powder to a large bowl. Stir this together well to combine. Now to the bowl, add the carrots to the glaze and toss the coat. Once the carrots are coated with the glaze, transfer to a large baking sheet lined with aluminum foil and place in the oven to roast for 30 minutes. Remove the carrots and you will have a tasty side dish to eat!
Should I Use A Specific Type Of Carrots?
It is best to use whole carrots with the peel still on. Stay away from the baby pre-packaged carrots that are already peeled. I find it best to use thin carrots because they are easier to peel and cut.
For storing the carrots to save as leftovers, place in an airtight container in the refrigerator for up to 4 days.

Glazed Roasted Carrots
Glazed Roasted Carrots | Sides
- 1 lb whole carrots (tops off) peeled and sliced lengthwise in 3-4 inch pieces or 1 large bunch
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp balsamic vinegar
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp garlic powder
Preheat oven to 375 degrees Fahrenheit.
To large bowl, add olive oil, honey, balsamic vinegar, salt, pepper, and garlic powder. Mix together to combine.
To the same bowl, add the sliced carrots and coat with glaze.
Transfer to a baking sheet lined with aluminum foil and place in oven to roast for 30 minutes.
Remove from oven and enjoy!
Storing: Store leftovers in airtight container in refrigerator for up to 4 days.
