Can I be real? I feel like I can trust you enough to speak my truth. Okay here goes…I’m not a salad type of girl. Whew…dang that felt good. And this doesn’t mean I don’t enjoy salads, it just means it’s not my first choice. It’s to the point that I have literally only ordered a salad out at a restaurant probably twice in my life. But like I said, I’ll eat them but you best to believe whatever type salad I’m eating is going to be GOOD! Because who has time for a bland salad?! So if you’re wondering is this quinoa mason jar salad is good. All I can say is, you don’t even have to question it!

I don’t know if you realize, but I love me some mason jars. I use them on a regular because they are so freaking versatile. You can use them for drinks, for smoothies, for desserts, and yes, for salads too. And this is the perfect salad to use them for. Plus it makes the salad look so pretty which actually helps me want to eat it. Don’t judge me!

And because I’m not here to please myself, I really wanted to bring you a lunch recipe that is great on the go, customizable, and can be made ahead. I mean you’re going to love the ease of this recipe, because the only thing that needs to be cooked is the quinoa which takes about 15 minutes to make. Also this is a great recipe for travel if you’re going on a family vacation and don’t want to spend money eating out. You would just need to bring along a bowl and fork. And because this can be made a few days in advance, you will have more time in your week, which means more time for what you love.

So here’s the steps for the recipe. First cook the quinoa according to the instructions on the package. Once cooked, set aside to let cool. While the quinoa is cooking, to a large bowl, add the chopped chicken and season with salt and pepper. Now heat a large skillet over medium heat and add the olive oil. Once the oil is heated, add the chicken and cook for about 6-8 minutes flipping occasionally until cooked through. Once fully cooked, take off the heat and set aside to let cool. Once the quinoa and chicken have cooled to room temperature. You can now start to assemble the jars. You will love these affordable mason jars from Amazon. Next, it’s really important to layer the ingredients in this specific order. Evenly dividing the ingredients among the jars, first add a layer of dressing on the bottom. Next layer the quinoa. Then layer on some chicken. Now layer the cucumber and tomatoes, and last but not least, add the salad on top. The way this is layered helps to prevent the wet ingredients from touching the dry ingredients, which makes the salads last longer before being eaten. Remember to repeat this layering with each mason jar until all ingredients are used.

That’s it, I think your family will truly enjoy these quinoa mason jar salads. Ingredients

  • 4 cups quinoa cooked 1 cup uncooked=4 cups cooked
  • 1/2 LB chicken breasts or tenderloins, chopped in bite sized pieces
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 1 cup Italian dressing
  • 1 cucumber, peeled and chopped
  • 2 roma tomatoes, chopped
  • 8 cups lettuce of choice I used spring mix

Instructions

  1. Cook the quinoa according to instruction on the package.

  2. While the quinoa is cooking, to a large bowl, add the chopped chicken and season with salt and pepper.

  3. Heat a large skillet over medium heat and add the olive oil.

  4. Once the oil is heated, add the chicken and cook for about 6-8 minutes flipping occasionally until cooked through.
  5. Once fully cooked, take off heat and set aside to let cool.
  6. Once the quinoa and chicken have cooled to room temperature, start to assemble the jars. 

  7. Evenly dividing the ingredients among the jars, first add 1/4 cup of dressing to the bottom of each jar. 

  8. Next layer the jar in this exact order, beginning with the quinoa,  then adding the chicken, next is the cucumber and tomatoes, and lastly place the lettuce on top.

  9. Once you have used all ingredients, place the lids on the jars and store the salads in the refrigerator until ready to be eaten. 

  10. When you are ready to eat the salads, dump the contents in a bowl and enjoy!
